Ingredients

1/2 cup raw tahini
1 cup fresh parsley or cilantro (or a mix of both)
Juice of 1 lemon
1 garlic clove, peeled
2–3 ice cubes
1/4 cup cold water (adjust for desired thickness)

Fresh. Bold. Powerful. A vibrant, herby, and irresistibly creamy spread that works as a dip, a sauce for grilled fish and chicken, or a spread for sandwiches. The secret is the ice cubes — they make the texture light, fluffy, and dreamy. Your new go-to spread.

1/2 cup raw tahini 1 cup fresh parsley or cilantro (or a mix of both) Juice of 1 lemon 1 garlic clove, peeled 2–3 ice cubes 1/4 cup cold water (adjust for desired thickness)

Directions:

Combine: Place the raw tahini, herbs, lemon juice, garlic, and ice cubes into a food processor or high-speed blender.

Blend: Pulse until the herbs are finely chopped and the mixture turns a bright, vibrant green.

Thin: With the motor running, slowly pour in the cold water until the tahini becomes light, fluffy, and smooth.

Serve: Perfect as a dip, a spread for sandwiches, or a sauce for grilled fish and chicken.

Tip: Store in an airtight container in the refrigerator for up to 5 days. Stir before using — it may thicken slightly.
